  4. Remove the shell and the head from the soup.
  5. Add shallot, galangal, lemongrass, coriander roots and kaffir lime leaves. Simmer for 5 minutes.
  6. Add Thai chilli paste, fish sauce, and mushrooms.
  7. Adjust the soup taste with salt and sugar.
  8. Add the shrimp and squid. Cook just until done (30 sec-1 minute).
  9. Off the heat and add the lime juice. Ready to serve with coriander leaf as the garnish.
