Soya chunks curry recipe - juicy and with lots of flavorful masalas, spices. with step by step pictures. I had soya chunks/nuggets in my hostel canteen,when I was studying in Trichy. We get mixed vegetable kurma with soya chunks in it. My friends told that it was soya chunks when I was clueless about it.
Instructions to make Soya Chunks Dahi Vada:
- Soak soya chunks in hot water for 1/2 an hour
- Then soak chana dal 1 hour separately
- Grind both to a smooth paste in a grinder along with ginger
- Take it out in a wide vessel add chopped onion, chopped green chillies, coriander leaves, and salt then beat the batter thoroughly with your palm so that you get a smooth and fluffy mixture
- Now heat sufficient oil in a kadai or deep bottom pan
- To make vada, take small amount of paste on your palm and do a hole on middle portion and slip it in hot oil carefully and deep fry in 3 to 4 batches in a medium flame until golden in colour from both the sides
- Now take them out carefully on an absorbent paper
- Soak fried vadas in warm water fir just 4 to 5 minutes, so that vadas becomes soft
- Meanwhile take curd in a bowl and beat until smooth, add black salt, sugar, roasted jeera and red chilli powder, green chillies and salt
- Then heat a pan add oil for tempering
- Add mustard seeds, green chilli, curry leaves, when start crackling then add this tempering in curd and mix well
- Now squeeze the water out of vadas by pressing it in between palms and soak in curd mixture
- Serve with garnishing few chopped coriander leaves, and sprinkle few red chilli powder and enjoy
