The trick to make perfect fried rice is not to use hot rice, but cold, cooked rice. Chicken, rice, soy sauce and shredded egg stir fried together. This is a very simple recipe. I had a lot of leftover rotisserie chicken from costco so I chopped that up in cubes.

Steps to make Fried Rice with Chicken and Eggs:
  1. Cook chicken until done, cut in pieces or separate with fork (depends what meet are you using, breast or tights)
  2. In the separate pot cook rice, set aside.
  3. On the pan or wok add a little bit of olive oil and chicken, fry until gets a little golden, add a little bit of soya sauce and garlic.
  4. Add rice to the pot, and fry until it’s get a little bit of color.
  5. Add veggies of your choice and let it cook for couple of minutes
  6. Make some space and add eggs inside, wait until it’s almost done and break it in pieces, mix well
  7. Add soya sauce, smoked paprika and chives. Stir well.

Spoon the chicken over the rice, top with a fried egg and a very generous drizzle of the white sauce. Serve immediately, with pita if using, tomatoes and lettuce for diners to add as they wish.
