- Preheat the oven to 200C.
- Combine all dry ingredients in a bowl.
- Add the maple syrup and melted coconut oil. Mix well.
- Scoop tablespoon-sized amounts of the mix, shape them into a ball and place on a lined baking tray - i forgot to line it but they didn’t stick too bad. Flatten them slightly so they are about 1cm thick.
- Bake for about 12 mins. Leave to cool or they collapse 🙁Then enjoy 😋
So cinnamon swirl cookies it is! These crunchy little vegan biscuits may look impressive and complicated to make with their pretty cinnamon swirl; but actually they are. These cookies are the perfect amount of sweet from the maple syrup, chewy from the oatmeal, and tart from the diced apples. The flavors and textures balance out quite nicely and when you bite into the cookies, they will scream fall! We also incorporated CBD into our cookies, but it is totally optional.
