- Take 3/4 cup tur/arhar(split pigeon peas)

- Make ready 2 tbsp oil
- Get 1/2 tsp mustard seeds
- Get 5-6 methi (fenugreek)seeds
- Make ready 1/4 tsp fennel seeds
- Prepare To taste salt
- Get 1 pinch sugar or jaggery
- Take 1 tbsp soaked imli (tamarind)pulp
- Get 5-6 cup water

Steps to make Sambhar:
- Soak tamarind in 1/4 th cup warm water.Soak dal with warm water for 15 minutes.Cube brinjal, lauki and pumpkin into 1 inch pieces.Cut carrots into small pieces.Chop beans.Chop onion and tomato.Boil all vegetables except brinjal with red chillies,chopped coconut and onion with 1/2 tsp salt.Add tamarind pulp.Pressure cook dal with turmeric and little salt upto 2 whistles.Open lid after 5 minutes.
- Add sambar masala to the dal.Heat oil and lightly fry brinjal till soft.Add vegetables and tomato puree to the boiled dal and boil.Heat oil and sprinkle mustard,fennel and methi seeds.When they crackle,sprinkle 1 pinch hing and curry leaves and fry.Add this to the dal and boil.Adjust salt and pinch of sugar.Serve hot with rice,idli,vada,dosa or uttappam.

But took a longer time to prepare it as compared to preparing with instant sambhar masala. what a yummy sambhar! love to have it with rice and some curd chilies. Ive not heard of keerai sambhar before. nutritious and yummy. The speciality of this sambhar is that it is made with minimal oil and loads of vegetables which enhance its nutritive value.
