Chana dal are 'poor man's peas (lowly daal) that too cut into two halves from it's centres and thereby, resembles only a 'not so chic' trampled version… Pricewise, chick peas are twice as that of chana dal, once again because the latter is halved… Tastewise, both are great. - FOR KACHORI -first make coarse paste of peace & green chillies. Then separately make paste of ginger and all seeds and whole garam masala.
- Heat pan put 1tbsp ghee add pease paste. Fry it then add hing & other masala paste. Fry until all the masala get dry. Before turning off gas add salt. Keep aside for room temperature.
- FOR KNEADING -take maida put salt as per taste &1tbsp ghee. Make a smooth dough like puri. Keep for resting half an hour.
- Pressure cook dal with little salt. Heat kadai 2tbsp oil put cumin seeds, whole red chillies add boiled dal put pinch of hing add potatoes &all dry masala salt & sugar. Cover the lid. Let dal for boil, make medium consistency. Turn off flame.
- Now take small ball from dough put peas filling in the center.Fold the ball make small roti with the help of rolling pin. As per photo.
- Heat another kadai. Take oil for frying. Fry kachori one by one. Now kachori & chana dal aloo ki rasa ready for picnic. 😋😋
