  1. Make ready 1 cup Moong dal (Split Green Gram's)
  2. Take 1/2 cup Masoor dal (split red lentil)

  5. Prepare 3 tbsp fresh Coconut grinded

Which dal is used in making sambar. Traditionally sambar is always made with tuvar dal (arhar dal or pigeon pea lentils). Even moong dal (yellow mung lentils) or masoor dal (orange lentils) can be used to make sambhar. A mix of tuvar dal and masoor dal can also be used.

Steps to make Mix Dal Sambhar:
  1. Take a bowl or a plate clean all dals. then wash thoroughly and soak it for 2 hours or overnight. Because while you soak the dal it should be reduced the cooking time.
  2. In pressure cooker add dal and needed water, pinch of turmeric powder, little oil and pinch of salt to boil mix well and cook it for up to 3 whistles dal becomes smooth and thick gravy consistency.
  3. Heat the oil in pan, splutter the mustard and cumin seeds. Then add Curry leaves and pinch of hing. After add minced garlic and ginger saute well.
  4. Furthermore, add tomato purée and ground coconut stir continuously for 2 mins on low flame. After add cooked dal and stir again.
  5. In this mixture add all masala spices like chilli powder, turmeric powder, cumin & Coriander powder, garam masala, sambar powder, to it. Add salt to taste if needed to add more water because of the desired consistency of your choice (medium-thick or thin flowing consistency) again mix it well.
  6. Cover and boil it. simmer for another 5 mins on low to medium flame. Then off the flame.
  7. Lastly add chopped coriander leaves and serve with puri, rice etc..

On occasions, I also make it only with mung dal. Sambar powder: the taste of the sambar depends heavily on the sambar powder which is a spice mix made by grinding several spices. Use your favorite brand of sambar powder or make one at home (see recipe below). Tamarind & Jaggery: these ingredients add the little tartness & sweetness to the sambar respectively. Final Tadka: and a good tadka (tempering) at the end with mustard seeds, curry.
