- Take 1 spoonful salt
- Take Flour for coating
- Get 2 garlic cloves
- Prepare 3-4 bay leaves

Add the zucchini wedges and toss to coat with the spice mixture. When zucchini is sliced thin and baked at low heat, it turns into thin rounds of crispy goodness. I don't have a lot of self-control with these chips either, but at least I know they are ultra light and packed with goodness. A guilt-free snack I can enjoy anytime I want!
Instructions to make Spicy baked courgette:
- Cut the courgettes lengthways, remove the flesh and slice the skin (about 5mm thick). In a bowl, mix the sliced courgettes with a spoonful of salt, combine well and leave it to rest for at least 1 hour, but the longer the better as the salt will marinade the courgettes.
- Once ready, squeeze the courgettes - bit by bit - with your own hands in order to eliminate any excess water and transfer them into a dish with flour to coat them. Meanwhile, heat the oven at 180°C and grease a baking tray with olive oil.
- Transfer the flour-coated courgettes into the tray, add the garlic cloves (whole or crushed), bay leaves, season with paprika (lots of paprika!) and sprinkle with some more olive oil. - Bake for about 20 minutes and voilà, dinner is served! - *TCF TOP TIP: don’t throw away the courgettes flesh, use it for another prep 😉
Japanese Zucchini is sauteed with onion in soy sauce and teriyaki sauce plus a few red pepper flakes for spice. Makes a great side dish for any Asian meal or grilled seafood, chicken, or steak. Brush zucchini lightly with extra virgin olive oil. If some of the zucchini chip are still damp, remove the ones that have crisped up, and return sheet pan to bake until all zucchini is nice and crispy. A good way to use up courgettes that have grown a little big or even if you buy them large, is to roast them in slices.
