- Add the chicken to the veg and cook for 20 mins. Turn and cook for a further 5 mins or until cooked through.
- Sprinkle over the fresh herbs season with salt and serve.
Drizzle over the oil and season well, then spread out and sit the meatballs among the veg. Serve with a rocket salad or some steamed seasonal greens on the side. Place the butternut squash, chicken, tomatoes and onion in a bowl. Add the Cajun seasoning and oil and mix well. Transfer the mixture to an ovenproof dish.
