- Get Roll of puff pastry
- Take 150 g pancetta
- Take Half a courgette, washed and chopped
- Make ready Small chopped onion

- Make ready Olive oil
Transfer to a greased quiche dish (if your pan is ovenproof, leave it in the pan) and add the feta by mixing through. In a skillet, soften the onion in the oil. Pour into a bowl and let cool. Stir in the ricotta, Parmesan, cream, eggs and parsley.
Steps to make Pancetta, courgette and Parmesan quiche:
- Preheat oven to 180. Cook onions for a few minutes until softened. Add courgettes and pancetta. Cook on medium heat for about 5-6 min.
- Roll out pastry into a round tray. Prick with a fork and blind bake for a few minutes. Remove from oven and add the filling. Add eggs and sprinkle with Parmesan.
- Bake for about 25 minutes. Cook on a wire rack π
Pour the filling into the crust. Sprinkle with the mozzarella and paprika. You see, while the combination of eggs, cheese and milk baked in crust is decidedly French - the decision to use healthy broccoli sounds way more northern Californian than Parisian. Use a slotted spoon to remove the onions and pancetta and sprinkle over the bottom of the springform pan. Place the pancetta in a large nonstick skillet set over medium heat.
