Transfer the cooked amaranth spinach to a porcelain bowl, cut it into small pieces with a pair of scissors.
- Transfer amaranth spinach from porcelain bowl to the pressure cooker pot and mix with cooked pumpkin and rice, add in olive oil and mix well. Transfer it to a plate and ready to serve.
