When ready to cook, heat a little extra virgin olive oil into a roasting pan, place the pork belly in the pan, rub the skin with salt and extra virgin olive oil. Pat the pork belly skin dry with paper towel and place on a rack inside a baking tray. Drizzle over the olive oil and rub the salt right into the skin with your hands. fry the pork in batches to ensure they don't crowd the wok or pan. Remove the pork with a slotted spoon and drain on a wire rack.
