  15. Prepare 4 only seeds Black cardamom
  16. Take 2 Bay leaves
  17. Make ready 3 to 4 Pipli
  18. Prepare 2-3 piece star anise(badyan ka phool)
  19. Get 1/2 tbsp cloves
  20. Take 1/2 tsp nutmeg(jaifal)
  21. Prepare 1/2 tsp mace(javetri)
  22. Make ready 3-4 whole or ground Deigee mirch 1 tbsp
  23. Get 1 tsp paprika (optional)
  24. Make ready 1/2 tsp citric acid
  25. Get 1 tsp black salt
  26. Prepare 1 cup or more oil
  27. Prepare 1/2 to 3/4 cup Roasted whole wheat
  28. Prepare 2tbsp oil
  29. Prepare 5 to 6 tez pata

Instructions to make Nihari:
  1. Grind all the whole masala into a fine powder. Make yakhni of bones with little salt, turmeric and red chillies, remove bones when it is done.
  2. Take a big pan and add oil and meat. Put ginger garlic paste, tez paat and saute for a minute or two. Now add ground nihari masala and saute for 4 to 5 min. Add yakhni of bones and large quantity of water in the pan.
  3. When it starts to boil then slow the flame and leave it for 2 to 3 hrs until the meat is tender or pressure cook it.
  4. Or alternatively pressure cook it for approx 30 min on medium heat. Now roast the flour with 2 tbsp of oil and add it in nihari. Let it cook for nearly 20 min on low flame. Keep stirring. When it gets thick it's done. If you want extra taari on top then add liitle tarka of more ground daigi mirch with oil, I want it less oily so I skip this step. Enjoy with tandoori roti. πŸ˜‹
