  1. Prepare 2 medium onions, finely sliced

  14. Prepare Small handful of fresh parsley or a sprig of oregano
  15. Prepare 1 Bay leaf

Drain the cod and break it into small flakes with a spoon. Less oil can be used but the oil adds a rich depth of flavor. Instructions to make Salted Cod Stew:
  1. Heat the olive oil in a saucepan over a medium heat and fry the onions, garlic and bay leaf for a few minutes until soft and translucent.
  2. Next add the wine and as soon as it starts to simmer add the tomato, potatoes and peppers. Allow to cook for 5-10 minutes
  3. Cut the cod pieces into smaller pieces and add to the saucepan, sprinkle with salt if needed, paprika and black pepper.
  4. Add the parsley or oregano and just enough water to the top of the potatoes. Cover with a lid. Turn the heat down and stew for 30-35 minutes. Stir the stew occasionally until cooked.

Indeed, for much of its history, nobody did; it was cheap and kept very well, which made it an ideal food for the poor, and for others too, on Fridays (when eating meat was forbidden) and no fresh fish was available. Salt cod, or bacalao in Spanish is one of the world's most fascinating foods. So interesting, in fact, that Mark Kurlansky wrote a fantastic book about it that won the prestigious James Beard Award.
