  10. Take 2 Eggs *lightly whisked
  11. Prepare 1 Spring Onion *finely chopped
  12. Make ready Toasted Sesame Seeds

In this dish, we substitute the tofu for harusame noodles, or mung bean noodles, for. Tofu, also known as bean curd, is a food prepared by coagulating soy milk and then pressing the resulting curds into solid white blocks of varying softness; it can be silken, soft, firm, or extra firm. You can buy kombu and dry bonito flakes in Japanese or Asian food stores or online. Very creamy, rich, and delicious Tofu salad with spinach, with hint of sesame flavor :) It is a traditional Tofu dish we make at home.

Steps to make Harusame, Tofu & Egg Soup:
  1. Place Chicken Stock (OR Stock of your choice), Sake and Ginger in a large saucepan or pot. Add thick parts of Bok Choy and bring to the boil over medium heat. Once boiling, add green parts, and season with Sesame Oil, Salt and White Pepper.
  2. Add Dry Harusame Noodles to the boiling soup. The noodles soften very quickly. Add Potato Starch mixture, stirring well. Add Tofu and bring back to the boil.
  3. Add lightly whisked Egg(s) slowly in a circular motion into the soup, and stir gently. When the Egg is cooked, remove from heat.
  4. Sprinkle with finely chopped Spring Onion and Toasted Sesame Seeds, and enjoy.

Of course you can find it at stores or restaurants, too. Harusame is made from either mung bean starch, potato starch or combination of those starches. I made a typical Harusame Salad with minimal ingredients today - vermicelli, carrot, cucumber, ham. This marinated tofu is hands down the best tofu I've ever tasted! It's super flavorful, simple to make, and very versatile.
